Quick and Delicious Coconut, Chocolate Chip Cookies [dairy free, grain free]

INGREDIENTS

  • 1 cup almond flour

  • 1/4 cup coconut flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup coconut sugar

  • 1 teaspoon cinnamon

  • 6 tablespoons coconut oil

  • 6 tablespoons cashew butter (or almond butter)

  • 1 egg

  • 1.5 cup chocolate chips (I use Enjoy Life mini chocolate chips)

  • a handful of shredded coconut

  • a handful of macadamia nut pieces

HOW TO

  • Preheat oven to 350

  • Line cookie sheet with parchment baking paper

  • Mix dry ingredients together in a bowl

  • Mix “wet” ingredients together in a different (you don’t have to melt the coconut oil ahead of time)

  • Add “wet” to dry ingredients, mix well

  • Fold in chocolate chips, macadamia nuts, and coconut flakes

  • Spoon dough on the cookie sheet

  • Bake for 12-14 minutes, depending on how soft/hard you like your cookies
